📿 I chose this shape to simulate the eternal bond it creates too, calling the mithai, ‘Raksha Chakra’.
💕 This is a healthier version as I have made these in an #airfryer. Those who have eaten Indian sweets know that we love to deep fry in ghee and load it with sugar, but TRUST ME , these are a healthier version!
🤗 I am sure some if you would like to recreate this, so here is the #recipe.
Ingredients:
1 cup plain flour
1/4 cup fine semolina
2 tablespoons ghee or melted butter
1/2 teaspoon cardamom powder
Lukewarm water (to bind)
For the coating:
4 tablespoons golden syrup
2 tablespoons water
Slivers of almonds and pistachios
Method:
- In a mixing bowl, mix the plain flour and semolina.
- Add the ghee and rub it into the mixture.
- Add the lukewarm water sparingly using a tablespoon until you can bind the mixture into a dough.
- Divide the dough into 5 portions
- Roll out a portion in a rectangular shape to about 15cm x 10cm in size.
- Use a ruler to make vertical cuts of about 0.5 cm width.
- You should now have long strips (like tagliatelle)
- Take 3 strips and join them at one end. Then start plaiting these till the end.
- Turn it over and form a teardrop shape and pinch at the point where it joins.
- Make the same from the remaining strips.
- Use an airfryer to fry these at 180 degrees C for 8 minutes. (Alternatively, you can fry them in oil at a medium heat until golden brown)
- In a saucepan, boil some water. Put another container on the saucepan ( like a double boiler) and pour the golden syrup in it. Add 2 tablespoons on water and let it thin down.
- Once the plaits are cooled down, dip in the syrup and put on a rack to dry. Decorate with almonds and pistachios.
