MUTHIYA
A brilliant way to use left over rice and make a healthy steamed snack.
Ingredients
1 cup grated dudhi/ lauki/ bottle gourd
1 cup besan / gram flour
1/2 cup wheat flour
3 tablespoons cooked rice
1 tablespoon chopped fenugreek/methi (optional)
1/2 teaspoon soda bicarbonate
1 teaspoon ginger paste
1/2 teaspoon crushed green chilli(optional)
1/2teaspoon turmeric powder
1 teaspoon salt
1 teaspoon red chilli powder
2 tablespoons oil
For Tempering:
1 tablespoon oil
1 teaspoon mustard seeds /rye
1 teaspoon sesame seeds
Method
- Mix both the flours in a mixing bowl
- Add all the dry ingredients
- Add the rice
- Add the Dudhi
- Add the oil
- Bind together and make small rolls like the size of your hand.
NB: you don’t need water as the water and Dudhi releases some water that helps to bind it all together.
NB: if you find the dough is sticky apply oil on your palms before making the rolls.
NB: grease the container you want to steam in with some oil.
- Place the rolls in the container for steamer leaving some space between them.
- Fill the steamer with some water and heat to medium heat.
- Place the container in it, cover and steam for 10 minutes on medium heat.
- Switch off the heat and let it steam for a further 5 minutes.
- Carefully remove the rolls and slice them.
- In a wide pan, pour the oil for tempering, add the mustard seeds and when these crackle add the sesame seeds.
- Add the slices of muthiya and stir gently for a few minutes.
- You can take these off the heat straight away or stir for some minutes to get them crisper. (Depends on how you prefer them)
- Serve with plain yoghurt
- Note: goes great with masala chai!! 🙂
