One of my favourite Sunday snacks is cheese chapati. I have written down the basic recipe below, but you can substitute the cheese with paneer, soya mince, feta crumble etc.
Ingredients:
3 cups plain flour
1 tsp salt
0.5 cup warm milk
1 cup of warm water
1 cup grated cheese ( I used medium cheddar, but you can use or combine any cheese you like)
1 onion
2 Green chillies
Coriander
Tamarind chutney
Chilli sauce
2 tbsp cooking oil for coating
Method:
1. Prepare the dough by mixing the flour with salt, warm milk, and water.
2. Bind the dough and knead for 5-6 minutes until the dough is soft.
3. Cover the dough with a cloth or plate and rest it for 15 minutes.
4. Grate the cheese.
5. Chop the onion, green chillies and coriander finely.
6. Add a teaspoon of salt to it an mix well.
7. Divide the dough into 6 pieces
8. Sprinkle some flour on the surface and roll out each dough piece thinly.
9. Using a pastry brush, coat the sheet with oil.
10. Fold the left and right sides of the sheet in, about 1-2inches.
11. Place the filling in the center.
12. Fold the top and bottom of the sheet, and seal to form a large rectangular shape.
13. Transfer to a pan with a bit of cooking oil.
14. Cook until crispy light golden brown.
15. Score into bite sizes while still hot.
16. Drizzle some chilli sauce and tamarind chutney on top.
17. Serve with a salad of chopped lettuce, carrots, tomatoes and cucumber. 🥗
