Caramel Dudhi Halwa

Dudhi, also known as lauki or bottle gourd is easily available and can be used in the same way as you prepare Gajar/Carrot halwa.

Ingredients

1 large bottle gourd

1 can of caramel condensed milk (397gm)

3 tablespoons milk powder (heaped)

1 cup coarsely ground nuts (these can be hazelnuts, almonds, pistachios and cashewnuts)

2 tablespoons ghee

Method

Grate the bottle gourd finely and squeeze the water out of it.

In a non stick pan, add the ghee and let it melt over a low flame. Add the bottle gourd and cook into all the remaining water has evaporated. Now add the condensed milk and stir for about 5 minutes.

Finally add the mixed nuts and milk powder. Keep stirring until the mixture leaves the sides of the pan.

Transfer into a serving bowl and serve with either fresh cream or vanilla icecream.
